The scale says I’m down 1.1lbs this week. I am so thankful all those donuts on Friday didn’t do more damage!
Today’s lunch was a Morning Star black bean burger, roasted butternut squash, popcorn, and oranges. I added some Autumn salsa from Trader Joe’s to the squash. Fabulous! But I think it looks a bit like baby food.
I prepare the squash by cutting it in half lengthwise, scooping out the seeds, and baking at 400 for 45-60 minutes depending on the size. Let cool slightly then scrape out the flesh with a fork. Sometimes I’ll add butter and/or pumpkin pie spice.
I realized something this evening after I left Walmart. I bought a small bag of sunflower seeds to sprinkle on salads. Ha ha ha. Really? Did I believe that lie I told myself? No. I tore open the bag as soon as I got in the car and it was gone before I knew it. Here’s the really bad part of this: My mind told me not to look at the nutrition info so I could pretend the calories didn’t count. WHAT?!? Yes, that’s the way the mind of a food addict works. We won’t even discuss the tortilla chips I bought to ‘eat in moderation’ with the salsa I bought to eat with MR chips or the French onion dip I bought to eat with raw veggies but ate half the tub with half the bag of chips I bought to eat with salsa!
